Pork Belly Roast

  • 800 g pork belly

Instructions

  • Preheat oven to 230°C (or 210°C fan bake). Boil a kettle. Set aside a baking dish.
  • Place pork, skin side up, in a colander and pour boiling water over the skin. Pat pork very dry and season fleshy side with measure of salt. Place in reserved baking dish, skin side up, and set aside, uncovered for 5 mins to dry out skin.
  • Generously salt pork skin and cook in oven for 60-70 mins (depending on thickness), until skin has crackled. Set pork aside to rest for at least 15 mins. Slice pork, crackling side down; this helps to cut through the crackling.
