Preheat oven to 180°C bake. Heat a pot of water.
Boil carrots in pot for 3-4 minutes, until almost tender. Once boiled, drain and add to a baking tray. Toss with oil and season with salt and pepper. Roast carrots for 10 minutes.
Meanwhile, mince garlic. Melt butter, garlic and honey in a small pot or saucepan until combined. After the carrots have been cooking for 10 minutes, remove from oven and pour over honey butter mixture. Return to oven and cook for a further 5 minutes. Switch to high grill for the last 2 minutes if more caramelisation is desired.
Remove from oven and sprinkle over manuka smoked salt.
