Pantry Staples ^
Instructions
- Preheat oven to 200°C (or 180°C fan bake).
- Heat oil in a frypan on medium-high heat. Add pulled beef to a pan and cook for 4-5 minutes, breaking up with a spoon as it cooks, until browned. Add vegetarian jus and red pepper pesto Bolognese and bring to a simmer. Simmer for 3-4 minutes, until reduced. Season to taste with salt and pepper.
- Carefully roll out pastry and cut into 4 squares. Transfer pastry squares to a large lined oven tray and use a pastry brush to brush the edges with milk.
- Divide pulled beef mixture between the four squares of pastry using a 1/4 cup measure, placing it in the middle of each square (there will be leftover filling; serve on the side or save for later). Top filling with cheese (save a small amount of cheese to sprinkle over the pies). Fold the pastry over the filling to make a triangle and use a fork to crimp down the edges. Brush pies with milk and sprinkle over reserved cheese.
- Cook pies on middle oven rack for 20-25 minutes or until golden.
