Apple Fritters

  • 1/2 cup oil ^
  • 2 apples peeled & diced
  • 1 pack doughnut mix
  • 2 eggs ^
  • 3/4 cup milk ^

Glaze

  • 1 pack icing sugar
  • 2 Tbsp water ^

    Instructions

    • These fritters can be made by shallow frying or in a muffin tin in the oven (like a yorkshire pudding). If you prefer to shallow fry, then don't worry about the oven, if you want to make in the oven, preheat oven to 200°C.
    • Heat oil in a large frypan to come 1cm up the pan. Alternatively, pour 1 tablespoon of oil into each cup of a muffin tray and place in oven while it preheats.
    • Peel and dice apples as small as possible, about 1/2 cm cubes.
    • In a large bowl, whisk together doughnut mix, eggs and milk. Fold in apples.
    • Carefully spoon ¼ cup amounts of batter into hot oil, cooking for 1-2 minutes each side. Alternatively, remove muffin tray from oven and very carefully, so as to avoid hot oil splashing, use a ¼ cup measure to dollop batter into muffin cups.
    • Bake in oven for 8 minutes. Meanwhile, combine icing sugar and water measure in a large bowl.
    • After 8 minutes, remove fritters from tin immediately and toss in glaze.
