We think there’s nothing better than good old-fashioned pancakes in the weekend. We’re sharing our simple recipe for fluffy and light homemade pancakes. If you’ve got little foodies around, get them involved too. They could crack the eggs, sift the flour and even flip the pancakes under supervision. Enjoy!
Perfect Pancakes
Ingredients

- 1 1/2 cup flour (GF if required)
- 2 Tbsp sugar
- 2 tsp baking powder (GF if required)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups milk
- 2 eggs
- 60 g butter, melted
To Serve
- Chopped fruit or berries
- Yoghurt or whipped cream
- Maple syrup
Instructions
- Add flour, sugar, baking powder, baking soda and salt to a large bowl and whisk to combine.
- Add milk, eggs and butter and whisk to combine, careful not to over-mix or your pancakes will be chewy.
- Melt a knob of butter in a non-stick fry-pan on medium-high heat. Use a ¼ cup measure to spoon mixture into the pan, cook for about 1 minute each side, waiting for bubbles to pop before flipping.

- Serve pancakes topped with yoghurt, fruit, maple syrup or whatever tickles your fancy!
