Quick & Easy Lunch: Fresh Mexi Wraps

There’s no excuses not to whip up a healthy lunch when you’ve got this recipe in your back pocket! These wraps are super quick, yummy, and full of good stuff.

Fresh Mexi Wraps

Ingredients

  • ½ avocado
  • 1 cup baby cos lettuce chopped
  • 1 tomato diced
  • ½ can black beans drained and rinsed
  • 50 g feta cheese crumbled
  • 2 Tbsp sour cream
  • 1 tsp chipotle sauce
  • 2 wheatmeal or seeded wraps

Instructions

  • Prep salad
    Dice avocado, chop lettuce and dice tomato. Add all to a large bowl.
  • Finish salad
    Drain and rinse black beans and add to bowl with salad. Crumble in feta, season with salt and pepper and mix well to combine.
  • Make sauce
    In a small bowl, mix sour cream with chipotle sauce.
  • Make wraps
    Spread chipotle sour cream on wraps and pack with Mexi salad, then wrap up.
