Fresh Mexi Wraps
Ingredients
- ½ avocado
- 1 cup baby cos lettuce chopped
- 1 tomato diced
- ½ can black beans drained and rinsed
- 50 g feta cheese crumbled
- 2 Tbsp sour cream
- 1 tsp chipotle sauce
- 2 wheatmeal or seeded wraps
Instructions
- Prep saladDice avocado, chop lettuce and dice tomato. Add all to a large bowl.
- Finish saladDrain and rinse black beans and add to bowl with salad. Crumble in feta, season with salt and pepper and mix well to combine.
- Make sauceIn a small bowl, mix sour cream with chipotle sauce.
- Make wrapsSpread chipotle sour cream on wraps and pack with Mexi salad, then wrap up.
