Sesame Noodle Chicken
Ingredients
- 50 g vermicelle noodles
- ½ tsp sesame oil
- 1 telegraph cucumber peeled into ribbons
- 50 g baby spinach
- 250 g precooked shredded chicken breast
- 2 tsp black sesame seeds
Sauce
- 2 tsp soy sauce
- ½ lemon juiced
- 1 Tbsp honey
- 2 tsp rice wine vinegar
- ½ tsp sesame oil
Instructions
- Before you start Bring a kettle to the boil
- Cook noodles Place noodles in a heatproof bowl and cover with boiling water. Use a fork to separate strands, then cover. Leave for 5 minutes, then drain well and toss with sesame oil to prevent sticking. Cut in a few places with kitchen scissors to make them easier to eat.
- Peel cucumber into ribbons
- Make sauceIn a small bowl combine soy sauce, lemon juice, honey, rice wine vinegar and sesame oil.
- Finish noodlesTop noodles with spinach, noodles, chicken and cucumber ribbons. Sprinkle over sesame seeds and drizzle over sauce
