Sesame Noodle Chicken

Ingredients

  • 50 g vermicelle noodles
  • ½ tsp sesame oil
  • 1 telegraph cucumber peeled into ribbons
  • 50 g baby spinach
  • 250 g precooked shredded chicken breast
  • 2 tsp black sesame seeds

Sauce

  • 2 tsp soy sauce
  • ½ lemon juiced
  • 1 Tbsp honey
  • 2 tsp rice wine vinegar
  • ½ tsp sesame oil

Instructions

  • Before you start
    Bring a kettle to the boil
  • Cook noodles
    Place noodles in a heatproof bowl and cover with boiling water. Use a fork to separate strands, then cover. Leave for 5 minutes, then drain well and toss with sesame oil to prevent sticking. Cut in a few places with kitchen scissors to make them easier to eat. 
  • Peel cucumber into ribbons
  • Make sauce
    In a small bowl combine soy sauce, lemon juice, honey, rice wine vinegar and sesame oil. 
  • Finish noodles
    Top noodles with spinach, noodles, chicken and cucumber ribbons. Sprinkle over sesame seeds and drizzle over sauce
