This lean green salad is a great option for a light lunch. The creamy tahini dressing is so so delicious and the edamame beans add protein and substance.
Green Goddess Salad
Ingredients
Salad
- 2 cup edamame beands
- 1 baby cos roughly chopped
- 1 lebanese cucumber peeled into ribbons
- ½ avocado diced 2cm
- 2 Tbsp pumpkin seeds
Tahini Yoghurt Dressing
- ¼ cup plain yoghurt
- 1 tsp tahini
- ½ tsp honey
- ¼ lemon juiced
Instructions
- Before you startBring a full kettle to the boil
- Cook edamamePlace edamame in a heatproof bowl and cover with boiling water. Cover and leave to cook for about 5 minutes, until tender. Drain well
- Prep saladRoughly chop lettuce, peel cucumber into ribbons and dice avocado 2cm. Add to large bowl.
- Make dressingIn a small bowl add yoghurt, tahini and honey. Juice in lemon and mix well to combine.
- ServeAdd drained edamame and pumpkin seeds to bowl. Season with salt and pepper. Toss with tahini dressing just before serving.
