Green Goddess Salad

This lean green salad is a great option for a light lunch. The creamy tahini dressing is so so delicious and the edamame beans add protein and substance.

Ingredients

Salad

  • 2 cup edamame beands
  • 1 baby cos roughly chopped
  • 1 lebanese cucumber peeled into ribbons
  • ½ avocado diced 2cm
  • 2 Tbsp pumpkin seeds

Tahini Yoghurt Dressing

  • ¼ cup plain yoghurt
  • 1 tsp tahini
  • ½ tsp honey
  • ¼ lemon juiced

Instructions

  • Before you start
    Bring a full kettle to the boil
  • Cook edamame
    Place edamame in a heatproof bowl and cover with boiling water. Cover and leave to cook for about 5 minutes, until tender. Drain well
  • Prep salad
    Roughly chop lettuce, peel cucumber into ribbons and dice avocado 2cm. Add to large bowl.
  • Make dressing
    In a small bowl add yoghurt, tahini and honey. Juice in lemon and mix well to combine. 
  • Serve
    Add drained edamame and pumpkin seeds to bowl. Season with salt and pepper. Toss with tahini dressing just before serving.
