Fijian Kokoda of Snapper Salad with Lime & Coconut Dressing
Ingredients
Lime & Coconut Dressing
- 1 red chilli thinly sliced
- 1 clove garlic grated
- 2 limes juiced
- 2 tsp coconut sugar
- 2 Tbsp rice wine vinegar
- 2 Tbsp fish sauce
- ½ cup lite coconut milk
Fish
- 400 g fillet sashimi-grade snapper skinned and boned, sliced into 1cm thick strips
Salad
- 1 red onion thinly sliced
- 1 cucumber cut in half & thinly sliced on angle
- 1 pack cherry tomatoes cut in half
To Serve
- 1 bunch coriander leaves picked
- 20 g coconut chips
Instructions
- Make dressingThinly slice chilli and grate garlic clove. Add to bowl with remaining dressing ingredients and mix to combine.
- Prep fishSlice fish fillet into strips. Place in a medium bowl with dressing and toss to combine.Cover with plastic wrap and place in the fridge for 10 minutes to marinate.
- Prep saladThinly slice onion and cucumber. Cut tomatoes in half. Pick coriander leaves.
- ServeSalad topped with fish, dressing, coconut chips and coriander.
