Fijian Kokoda of Snapper Salad with Lime & Coconut Dressing

Ingredients

Lime & Coconut Dressing

  • 1 red chilli thinly sliced
  • 1 clove garlic grated
  • 2 limes juiced
  • 2 tsp coconut sugar
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp fish sauce
  • ½ cup lite coconut milk

Fish

  • 400 g fillet sashimi-grade snapper skinned and boned, sliced into 1cm thick strips

Salad

  • 1 red onion thinly sliced
  • 1 cucumber cut in half & thinly sliced on angle
  • 1 pack cherry tomatoes cut in half

To Serve

  • 1 bunch coriander leaves picked
  • 20 g coconut chips

Instructions

  • Make dressing
    Thinly slice chilli and grate garlic clove. Add to bowl with remaining dressing ingredients and mix to combine.
  • Prep fish
    Slice fish fillet into strips. Place in a medium bowl with dressing and toss to combine.Cover with plastic wrap and place in the fridge for 10 minutes to marinate.
  • Prep salad
    Thinly slice onion and cucumber. Cut tomatoes in half. Pick coriander leaves.
  • Serve
    Salad topped with fish, dressing, coconut chips and coriander.
