Banana Pancakes
Ingredients
- 1 ripe banana mashed
- 2 eggs
- 2 Tbsp preferred milk
- ¼ cup wholemeal flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp oil
To serve
- 4 Tbsp yoghurt
Instructions
- Prep pancakes. In a large bowl mash bananas until smooth. Add eggs, milk, flour, baking powder and cinnamon. Mix well until smooth. Alternatively, place all ingredients in a blender and blitz until smooth.
- Cook pancakes. Heat oil in a large fry-pan on medium heat. Pour ¼ cup measures of batter into pan and cook for about 2 minutes, or until bubbles start to appear. Flip and cook for a further two minutes until golden and cooked through (turn down heat if needed).
- Serve, pancakes with yoghurt.
