By now we hope you’ve tried our go-to Buttermilk Pancake Mix, available to all My Choice customers as part of our My Food Bag Kitchen range. And there is nothing wrong with eating these delicious morsels on their own, but sometimes you just need to jazz things up! So whether you’ve got guests for brunch or it’s just Sunday brekky in your PJs, here’re some ways to make your pancakes a bit more exciting.
Old Faithful
You can’t go past the classic blueberry pancake! Fresh or frozen, they add a beautiful bite of sweetness to your batter. If you’re using frozen, toss them in a little flour first, so they don’t stain the whole batter blue. Add 1 cup of berries to your batter and cook as per instructions. Top with yoghurt and maple syrup.
À la Française
OK, so these aren’t crêpes, but that doesn’t mean we can’t enjoy them as the French do, drizzled with lemon juice and sprinkled with a little sugar for a delicate and sweet breakfast.
Classic American

The Adventurer
This one is for those of you who like to get experimental. Pour your pancake batter into the pan in a circle, with a whole in the middle. Crack an egg into the centre and cook for 1-2 minutes, until bubbles on the surface of the pancake start to pop. Flip the pancake and top with some grated cheese and spring onion. Place a lid on top for 1 minute, until cheese is melted and egg is cooked to your liking.
