These chocolatey brownies are full of goodness. They contain no gluten, dairy or refined sugar and have a decent hit of protein! The ideal sweet treat!
Fudgey Black Bean Brownies
Ingredients
- 1 400g can of black beans, rinsed and drained
- 1 egg
- 2 egg whites
- ½ ripe avocado
- ½ cup unsweetened cocoa or cacao powder
- ¼ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ⅔ cup maple syrup or coconut sugar
Instructions
- Preheat oven to 180°C. Line a small loaf tin with baking paper.
- Add all ingredients to a food processor and combine for about 2 minutes, until thick and smooth. Alternatively, mash the beans in a large bowl and whisk in all remaining ingredients until very smooth.
- Transfer mixture to prepared tin and bake for about 25-30 minutes, or until brownie springs back when pressed.
- Allow to cool for about 1 hour before turning out onto cooling rack to cool completely.
- Cut cooled brownie into 10 delicious squares. Coat with a little sifted cocoa, if desired.
