1 cup finely diced pineapple
1/2 avocado, diced 1cm
1/2 red onion, finely diced
1/4 cup finely chopped coriander
Juice of 1 lime
1 Tbsp lite coconut milk
- Prep salsa. Combine all salsa ingredients in a bowl with a pinch of salt. Toss to combine.
- Serve as a condiment with a BBQ, as a salad topping or with home-baked tortilla chips.
