Fennel Slaw
Ingredients
- ¾ fennel bulb, thinly sliced
- ½ courgette, very thinly sliced
- ½ apple, grated
- Juice of 1/2 lemon
- ½ tsp white wine vinegar
- ½ tsp mustard
Instructions
- Prep all slaw ingredients. Combine in a large bowl with a pinch of salt and 1 tsp extra-virgin olive oil. Mix together well.
- Serve as is, or topped with shredded, poached chicken.
