Ingredients
1 cup frozen edamame beans
3/4 avocado, diced
Juice of 1/2 lemon
Pinch of chilli flakes (optional)
Method
- Bring a pot of salted water to the boil.
- Cook edamame. Cook edamame in pot of boiling water for 3–4 minutes, until bright green and tender. Drain, rinse under cold water and drain again well.
- Make smash. Add edamame, avocado, lemon juice, 1 tsp salt and chilli flakes to a bowl and use a fork to crush and combine.
- Serve as a dip with veggies, or to top grainy bread for a delicious breakfast.
