Ingredients
3/4 capsicum, cut into rough pieces
3/4 x 400g can chickpeas, drained & rinsed
1 Tbsp tahini paste
Juice of 1 lemon
1 tsp sumac
Method
1. Preheat oven grill to high.
2. Prep hummus ingredients.
3. Grill capsicum. Toss capsicum on an oven tray with 1/4 tsp oil and 1/2 tsp salt. Grill (on upper oven rack) for about 15 minutes, until tender and beginning to brown.
4. Make hummus. Add all hummus ingredients to a food processor, along with capsicum, 1/2 tsp salt and 1 tsp extra-virgin olive oil. Blend until smooth.
5. Serve capsicum hummus as a dip with veggie sticks or crackers, or as a salad or toast topper or sandwich filler.
