Veggie Burger Patties

Serves 1

Ingredients

Patties

300g can of refried black beans, any liquid drained

1 carrot, grated

1/4 red onion, finely diced

1/3 cup wholemeal breadcrumbs

1 tsp smoked paprika

1/2 tsp ground cumin

To Serve

1/2 cup frozen corn

1/2 lettuce, leaves separated

1/2 Lebanese cucumber, diced

1 Tbsp lite sour cream

Method

  1. Prep & make patties. In a bowl combine all patty ingredients with 1/2 tsp salt. Season with pepper, mix well, then use 1/4 cup worth of mixture to shape patties, about 1.5cm thick. Allow to firm up in fridge for about 10 minutes.
  2. Cook patties. Heat 1 tsp oil in a non-stick fry-pan on medium heat and cook patties for 2–3 minutes each side, until golden and cooked through.
  3. Prep serving ingredients, if using. Return same pan to medium-high heat and stirfry corn for 2–3 minutes, until tender and golden.
  4. Add patties to lunches across the week for extra protein, nutrients and fibre. Alternatively, serve patties in lettuce, topped with sour cream, corn and cucumber for a tasty meal.
