Greek Salad with Chickpeas

This easy meal prep salad is full of yummy Greek flavours like feta, olives, walnuts and mint.

Ingredients

Salad

1x 400g can chickpeas, drained, rinsed and patted dry (or see alternative)

½ cucumber, diced 1cm

2 tomatoes, diced 1cm

1 capsicum, diced 1cm

1 Tbsp fresh mint, thinly sliced

2 Tbsp olives, chopped

30g feta cheese, diced 0.5cm

Juice of ¼ lemon

To top

1 Tbsp walnuts, roughly chopped

Patties (optional, alternative)

1x 400g can chickpeas, drained and rinsed

1 egg yolk, whisked

Zest and juice of ¼ lemon

1 tsp soy sauce

½ tsp oil

Method

1. Make salad. Toss all salad ingredients together in a medium bowl.

2. Alternatively, make chickpea patties using chickpeas.

3. Prep patties. Add chickpeas to a medium bowl and mash until a paste-like consistency (or use food processor). Combine all patty ingredients (except oil) in a medium bowl and mix together well. Using a tablespoon measure and clean, damp hands, roll mixture into patties, about 1cm thick.

4. Cook patties. Heat oil a medium, non-stick fry-pan on medium heat and cook patties for about 2 minutes each side, until golden and cooked through. Set aside on a paper towel to drain.

Fill your jar or bowl with Greek Salad (top with chickpea patties, if required) and sprinkle with walnuts.
