Ingredients
½ tsp oil
½ broccoli, cut into small florets and stalk diced 1cm
½ clove garlic, finely chopped
1 cup stock
2 Tbsp lite sour cream
1 Tbsp grated Parmesan cheese
1 Tbsp parsley, chopped
¼ lemon, juiced
Method
- Heat oil in a heavy-based pot on low heat. Cook broccoli and garlic for 5–6 minutes, until bright green and softened. Add stock, increase heat to medium and simmer for 5–6 minutes, until soft.
- Transfer mixture to a heat-safe blender or use a stick mixer to purée until smooth. Return soup to pot and return to a medium heat. Fold through sour cream, Parmesan and parsley and bring to just below a simmer.
- Once warmed, ladle into a bowl, fold stir through lemon juice and season to taste.
