A healthy dessert option for your summer potluck, or shared lunch and perfect to satisfy that craving for something sweet. These cute treats pack a nutritious punch too — healthy fats from the nut butter, potassium, magnesium and fibre from the banana and antioxidant rich cocoa!
Serves 8
Ingredients
2 tablespoons coconut oil
¼ cup cocoa or cacao powder
1 tablespoon maple syrup
1 tablespoon nut butter (e.g. peanut, almond, cashew)
2 bananas
16 toothpicks (approximately)
1 tablespoon desiccated coconut (optional)
Method
Line a baking tray/dish with baking paper.
1. Place coconut oil, cocoa/cacao powder and maple syrup in a small pot on low heat. Cook for about 1 minute until cocoa is dissolved and mixture is smooth.
2. Meanwhile, slice bananas 1cm, aim for an even number of slices (about 36). Place a small dollop of nut butter onto half of the banana slices, then stack another slice on top. Put a tooth pick in each of the stacks.
3. Once cocoa mixture has dissolved, dip each banana stack into it, swirling around to coat. Don’t worry if you don’t coat the whole thing, it can be a bit messy. Place coconut into a small bowl and dip chocolate coated ends in, or sprinkle coconut over the dippers.
4. Place chocolate banana dippers onto prepared tray/dish and transfer to the freezer to set, at least 1 hour.
